There are so many options in the supermarkets already, even partially in organic quality. That’s true, but have you ever looked at the ingredient lists? Unfortunately, sugar is usually one of the main ingredients and the granolas often also contain palm oil. You should rarely consume any of them, if at all.

In search for an naturally sweetened and vegan granola, I was inspired by Deliciously Ella and gave her Crunchy Orange, Coconut & Vanilla Granola a try.

Crunchy orange coconut granola - vegan and naturally sweetenedIt’s really very delicious! But I wanted to make it a bit healthier and therefore reduced the maple syrup and the coconut oil. And since I like it a bit crunchier, I added some more seeds to my homemade granola.

Homemade Orange Coconut Granola
This delicious homemade granola is the perfect start to your day - it's crunchy, slightly fruity and has an irresistible coconut-vanilla flavor. It is naturally sweetened with maple syrup and contains lots of crisp and healthy nuts & seeds.
I like to eat mine with chilled oat milk and lots of fresh fruit.

Ingredients
  • 200 g full grain oats
  • 30 g coconut chips
  • 40 g pumpkin seeds
  • 50 g sunflower seeds
  • 2 Tbsp buckwheat (whole)
  • 30 g almonds, chopped
  • 40 g virgin coconut oil
  • 60 ml maple syrup
  • 2 tsp cinnamon
  • 1/2 tsp ground vanilla
  • 1 orange, juiced
  • 50 g raisins*
Instructions
  1. Preheat your oven to 140°C|280°F (fan setting).

  2. Mix all ingredients from oats to almonds in a large bowl.

  3. Let the coconut oil melt on low heat in a small pot on the stove. When it's liquid, turn off the heat and stir in the maple syrup and spices. Finally, pour in the freshly squeezed orange juice.

  4. Now add the liquid ingredients to the dry mixture in the bowl and stir well until it's thoroughly mixed.

  5. Pour the finished mixture onto a baking sheet lined with baking paper and push it on the middle rail into your oven.

  6. Bake for 20 minutes, then turn your granola carefully. After another 15-20 minutes, the granola is finished. (It will crispen up when cooled completely.)

  7. Let it cool completely on a grid (but not in the oven!) and then mix in your raisins (or other dried fruits of your choice). Now fill it in a nice glass and start dreaming of tomorrow's breakfast. 🧡

Notes
** If you don't like raisins, you can easily replace them with cranberries, dried cherries or mulberries. The mulberries give the granola some extra crunch even. 😉
