Fruity Sweet Potato Soup with Pears - vegan & gluten-freeAutumn is finally here. And it couldn’t be more charming this year. Lots of sunshine and mild temperatures sweeten the end of summer a little bit for me. 💛☀️ We made the most of the great weather and visited an organic farm in the neighbourhood. There you can admire cows, pigs & chickens up close. 🐮🐷🐥 Obviously, that was a big adventure for our little toddler boy. So much to see, strange noises and smells. He absolutely loved it. Especially as a huge cow just came straight from the stable towards us. 😅

Did you know that cows can be incredibly loud? Even the calves, especially if they are hungry. I find it important that children can see and (sometimes) touch real animals instead of just knowing them from books or television, because only then they can develop a real relationship with other living beings. That was a great experience for all three of us.

You can not only observe and admire animals on the farm (in the case of our little man 🙂), but there is also a farm shop with many regional products and a small farm café, even with vegan dishes. 🙌 We had delicious lunch there (pumpkin soup & pizza) and felt very comfortable. You get the feeling that time has stopped a little on the farm. I did not feel driven & rushed as in the normal city life. Almost like a little vacation. 💚

Of course, everything had to come home with us. Keanu insisted on a basket of physalis, which he munched right away on the way home. 🤷 Anyways, enough rambling, let’s get to today’s recipe now.

Sooo good! Just right for a cool autumn evening. The soup is wonderfully warming, subtly fruity and the great color is reminiscent of colorful foliage. 🍁 Good for the soul, but also good for the body because the sweet potato is just a real super veg. Namely, 100 grams of sweet potato already cover your entire daily requirement of vitamin A and beta-carotene. It also contains many more vitamins & minerals, including Vitamins C, E & K, Potassium & Zinc.

Fruity Sweet Potato Soup with Pears
Creamy, fruity, warming & healthy - this soup is a must-have for this autumn. Sweet potatoes are real power packs full of vitamins and minerals. And of course they are delicious, too. 💛

Ingredients
  • 1 Tbsp coconut oil
  • 1 onion, diced
  • 1 thumb fresh ginger, peeled & diced
  • 2 garlic gloves, diced
  • 2 tsp english curry
  • 3 medium sweet potatoes, peeled & chopped
  • 2 ripe pears, cored & chopped
  • 2.5 cups vegetable stock
  • 1.5 cups coconut milk, from a can
  • 1 tsp coriander
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • pinch of pepper & nutmeg
Instructions
  1. Melt the coconut oil in a large pot over medium heat and sauté the onion and ginger for a few minutes until the onion turns glassy. Then add the garlic and curry powder and fry everything while stirring for another minute until fragrant.

  2. Now sweet potatoes and pears come into the pot. Stir briefly and deglaze everything with the vegetable broth. Cover it and let simmer for 20 minutes.

  3. Take the pot from the heat, pour in the coconut milk and blend the soup with a hand blender until smooth.

  4. Add all the spices to the soup, stir well and let the soup boil up again. Taste and season if necessary. Enjoy!

  5. Add a dollop of cool coconut yoghurt, a pinch of chilli flakes and coconut chips for decoration. Or you sprinkle your soup with crispy roasted seeds for the extra crunch.
