For the porridge:

  • 2/3 cup porridge oats
  • 1 cup oat milk*
  • 1/2 tsp ground vanilla

For the compote:

  • 2/3 cup raspberries fresh or frozen
  • 2/3 cup blueberries fresh or frozen
  • 2 Tbsp apple juice or water
  • 1 Tbsp maple syrup
  • 1 Tbsp chia seeds

  1. Put oats, plant milk and vanilla in a small saucepan and bring everything to a boil.

  2. Reduce the temperature to low and let the porridge simmer for about 5 minutes with the lid closed until it is creamy.

Stir occasionally and add some oat-milk if the porridge gets too thick.

  3. While the porridge is simmering, put all the ingredients for the compote (except chia seeds) in a second pot and simmer the fruit over a medium heat.

  4. The berries release their juice after a few minutes and now you can add the chia seeds. Stir well and let the compote simmer on low heat until it is slightly thickened.

  5. Put the finished porridge in a bowl, pour the compote over it and decorate your breakfast as you like with some nut butter, coconut, banana, dried fruit or seeds.

*Or any other plant-milk of your choice.
